My Five Favorite Foods Are Cookies with a Cup of Tea

When my children were going to school there would always be some sort of Cookie (in my days they were called biscuits,) in the baking tin for their school lunches.

Some healthy, some not so healthy to today’s standards, because of their sugar content, which to me makes no difference because I still eat them, my weight never changes.

They didn’t always have a filing in them, so you don’t have to either , that’s a saving on the waistline.

Here’s my Five Recipes for Cookies with your cup of Coffee or tea.

Yo Yoes

Yo-Yos

Ingredients

  • 12 oz butter
  • 4 oz icing sugar
  • 1/2 teaspoon vanilla essence
  • 12 oz flour
  • 4 oz custard powder

Method:
1. Cream butter and sugar
2. Add essence then dry ingredients.
3. Roll into small balls and flatten with a fork.
Bake 20 mins at 350F.
When cold put together with
2oz butter
9 Tablespoons icing sugar
1 1/2 Tablespoons custard powder

Makes about 30 -32 doubles

Passionfruit Kisses

Ingredients

  • 4 oz butter
  • 4 oz sugar
  • 2 eggs
  • 4 oz flour
  • 4 oz cornflour
  • 1 teaspoon baking powder

Method:
1. Cream butter and sugar well.
2. Add eggs one at a time and beat again.
3. Add sifted dry ingredients.
4. Put small spoonfuls on greased trays
5. Bake 8 to 10 minutes at 400F

When cold, put together with Passion Fruit icing or Raspberry Jam and sprinkle with icing sugar.
You can fill with a butter icing and use any flavor you don’t have to sprinkle icing sugar on them.
Sponge Drops

Sponge Drops

Ingredients

  • 2 eggs
  • Pinch salt
  • 2 Tablespoon sugar
  • 2 tablespoons flour
  • 1 teaspoon baking powder

Method:
1. Beat eggs with a pinch salt, add sugar and beat until thick.
2. Fold in sifted flour and baking powder.
3. Drop small spoonfuls of the mixture on cold greased trays.
4. Bake 5 to 7 minutes at 400F.
Put together with strawberry jam and whipped cream.

Note: Dissolve a packet of Jelly crystals in 1 pint of water.
Set jelly in wet patty tins or sponge oyster tins.
Put cream on one sponge drop and turn out a jelly on top of each.
These look very attractive in different colors for parties.

Melting Moments

Ingredients

  • 7 oz. butter
  • 3 oz icing sugar
  • 4 oz flour
  • 4 oz cornflour
  • 1/2 teaspoon baking powder

Method:
1. Cream butter and sugar well.
2. Add sifted dry ingredients,
3. Roll into small balls
4. Place on cold greased trays
5. Press down each biscuit with a fork or this mixture may be put through a forcer.
6. Bake about 20 minutes at 350F

Put together with raspberry jam or an orange or lemon butter filling, or just eat them as they are.

Ginger Crunch

Microwave Ginger Crunch.

No eggs in these microwave cookies.

Ingredients

  • 125 grams (1/2 cup) butter
  • 1/2 cup brown sugar
  • 1 1/2 cups flour
  • 3/4 teaspoon baking powder
  • 1 teaspoon ground ginger
  • Icing: 50 grams ( about 2 oz )
  • 1 tablespoon golden syrup
  • 1/2 cup icing sugar
  • 1 teaspoon ground ginger
  • 1/4 finely chopped crystallized ginger

METHOD:
Beat butter and sugar until soft.

Sift flour, baking powder and ginger.
Stir dry ingredients into creamed mixture, mixing well.

Press into a 22cm x 30cm (9inch x 12inch) microwave slice dish.

Elevate and microwave on HIGH power (100%) for about 3 1/2 minutes or until base looks cooked.

Allow to cool.
When cold ice with ginger icing.
Cut into squares when icing has set.

ICING:
Put butter and golden syrup into a glass jug.
Cook on HIGH power for 30 seconds or until butter has melted.
Sift icing sugar and ginger.
Add to melted ingredients.
Stir well.
Cook icing on High for a further 30 seconds.
Fold in the crystallized ginger.

  1. As I sit here eating my healthy nuts and drinking water, I salivate over your delicious cookies. I am so happy that I live a vivid sensory lifestyle, that way I can believe I taste your delectable delights without actually putting all these calories in my mouth. I suspect you have culinary talents that far overweigh mine, as I’m only up to making soup and hot cereals with a tad of butter and honey for weeklong consumption. Baking is a memory for me. My beloved Mother did it so well, and I relive moments in the kitchen with her as she baked instead of baking myself. Yummy pies, cakes, and cookies…similar to yours. I hope you have a dandy time making your tasty treats, and I much appreciate you sharing them here. I’m highly visual.
